White: Domaine des Cassagnoles 2008
Many of you will remember the Three Musketeers! They were originally from Gascony, were Domaine de Cassagnoles is produced by Gilles Baumann. This cuvee is a blend of 40 to 50% Colombard, 25 to 30% Ugni Blanc, and the balance 20 to 25% Gros Manseng. Baumann's Cassagnoles is a consistent Golden medal winner in Eauze (Local competition) and Paris, as well as three stars in Guide Hachette, and is entirely grown and bottled on the estate.
Each grape is harvested and processed separately and the blend occurs in February/March. It is a dry white wine, fruity and very lively in the mouth. It has a nice balance and acidity with a soft finish. It will accompany well-grilled fish, barbecue, and cheese or can be drunk on its own. Serve it cool!
