Red: Domaine du Sacré-Coeur, St-Chinian 2000

The region of Languedoc-Roussillon extends over about half of the French Mediterranean coast and its hinterland, west of the Rhone delta, across to the Spanish border and the Pyrénées Mountains. St-Chinian is one of its “Appellation contrôlée” wines located 30 miles Northwest from the city of Béziers.

Cabaret Father and Sons produce the “Cuvée Kevin”. It is made of 1/3 Carignan, 1/3 Grenache and 1/3 Syrah. It is a powerful wine with a dark robe and solid tannins. It has notes of vanilla, gingerbread and torrefaction. The finish is long and generous. The “Cuvée Kevin” has a very good aging potential of 5 to 7 years.

White: Domaine de la Bachellery, Vin de Pays d'Oc 2003

Marina and Bernard Julien are the owners of the Domaine de la Bachellery, located in Languedoc near the city of Béziers. They produce this 100% Chardonnay under the Appellation “Vin de Pays d'Oc”.

Harvesting is done at night when the air is cool. The grapes are rushed to the cellar to avoid oxidation, and the stalks are removed. Fermentation is done in stainless steel tanks under controlled temperature for 30 to 40 days. Then it is left on fine lees all winter.

The Domaine de la Bachellery has a pale straw color robe. The nose is fresh, flowery with notes of wild rose, and slightly mineral. In the mouth it has a nice structure, fleshy with notes of vervain and lemon. Serve it at 50 or 55 degrees with chicken, trout or grilled salmon. Domaine de la Bachellery is not a wine to keep. Drink it before 2005.
