Red: Les Domaines Paul Mas “Vignes de Nicole” - Cabernet Sauvignon-Syrah 2001

“Les Domaines Paul Mas” are in the Languedoc region. They are made of several vineyards totaling 70 hectares. Among them, the “Vignes de Nicole” offers a unique soil and microclimate, located as it is on the hillside of the Herault valley. The soil on the higher part of the vineyard is made of clay and chalk with fossils, and the lower part has a deeper layer of chalky soil. This property belongs to the Paul Mas family who has a winemaking tradition dating back over 100 years.

This unique blend of the famous Rhone varietal and the main Medoc varietal is made of 55% Cabernet Sauvignon and 45% Syrah. It is deep and dark, with lots of crushed berries and minerals with peppery and spicy notes. It has an impressive concentration and balance of flavors from both the Cabernet and the Syrah. Long finish with full tannin structure that softens to licorice and cocoa. A huge mouth full of wine that is at its best with grilled meats. Try it with a leg of lamb.

This Paul Mas Cabernet/Syrah will age over 10 years under the right conditions.

“Les Domaines Paul Mas” are in the Languedoc region. They are made of several vineyards totaling 70 hectares. Among them, the “Vignes de Nicole” offers a unique soil and microclimate, located as it is on the hillside of the Herault valley. The soil on the higher part of the vineyard is made of clay and chalk with fossils, and the lower part has a deeper layer of chalky soil. This property belongs to the Paul Mas family who has a winemaking tradition dating back over 100 years.

The oaked-aged Chardonnay and the stainless steel-aged Viognier make for a wonderful marriage that offers layers of peach, tropical fruits, apricots and honeysuckle turning smooth and creamy. A long and intricate aftertaste keeps the flavor coming with a long finish.

This is a truly enjoyable bottle of wine that can be savored with white meats, blue cheese, tarts and fruits.

It has an aging potential of 5 to 6 years.
